Okay, we need to have a serious conversation about this Valentine’s Day dessert – these ricotta bowls are everything beautiful and lovely and delicious. Paired with just the perfect hint of orange juice and zest, along with warm pan-fried pears, and topped with a decadent salted chocolate sauce, this recipe is everything you could ever want and more. Even though we’re calling it a Valentine’s Day dessert, we think you could indulge in this for any holiday or any reason, really!

Note: Try to find fresh basket ricotta cheese, if you can. If your ricotta seems wet, you may not need to add as much (if any) milk.

INGREDIENTS

1 cup fresh basket ricotta cheese (see the note above)

Juice and zest of 1 orange

2-3 tablespoons milk (see note above)

2 tablespoons honey or maple syrup (sweeten the ricotta cheese to your taste!)

1 Bosc pear

1 tablespoon extra virgin olive oil

SALTED-CHOCOLATE SAUCE

2 tablespoons unsalted butter

6 ounces dark or milk chocolate

1/4 cup heavy cream

1 teaspoon vanilla extract

1/2 teaspoon flaky sea salt

METHOD

Prepare Ingredients: Trim the top and bottom of the pear and cut into wedges. Remove any seeds. Set aside.

Prepare the Ricotta: In a bowl, whisk the ricotta cheese, juice and zest of 1 orange, and the honey or maple syrup. Once all the ingredients are incorporated, add a touch of milk if you’d the mixture to be a bit smoother and creamier. Chill until ready to serve.

Cook the Pears: In a small frying pan, heat the extra virgin olive oil over medium heat. Add the pears, cut side down, and cook on each side for 3 minutes until well browned. Flip 2-3 times until well browned all over. Turn off the heat.

Prepare the Chocolate Sauce: As the pears are cooking, prepare the sauce. In a sauce pan, melt the butter over medium heat. Add the chocolate and whisk until melted. Add the heavy cream, vanilla, and the sea salt and cook for 5 minutes until smooth and melted. Turn off the heat.

To Serve: Spoon the ricotta into bowls and arrange a few pear slices on top. Drizzle the chocolate sauce all over and sprinkle a bit of flaky sea salt on top of the dish. Enjoy!
