This is the meaty version of my vegetarian udon noodle recipe that I posted a bit ago. These pork udon noodles are easy to prepare and SO tasty and spicy. Although I do give the vegetarian udon recipe a star or two higher than this pork udon noodle recipe, they’re both super delicious and, best of all, EASY as hell to prepare for a quick weeknight meal because udon noodles with spicy peanut sauce is always a good decision.
This udon noodle recipe uses a spicy peanut sauce and a garnish of fresh, crispy radishes dressed in sesame oil. Ground pork is fried in sesame oil until browned all over and then aromatics are added along with the peanut sauce and udon noodles for a perfectly slurpy, saucy udon noodle dinner.

Ingredients for Pork Udon Noodles with Spicy Peanut Sauce
16 ounces dry udon noodles
1 pound ground pork
4 scallions, divided
3 cloves garlic
4 small radishes (I used French breakfast but red radishes or daikon radishes will be fine!)
⅓ cup creamy peanut butter
⅓ cup soy sauce
⅓ cup unseasoned rice vinegar
4 tablespoons, plus 2 teaspoons sesame oil, divided
2 teaspoons chili oil (more or less to taste, depending on spice preference)
1 teaspoon toasted sesame seeds
Salt to taste
More chili oil, optional
Prepare Ingredients: Bring a large pot of salted water to a boil and cook the udon according to package instructions. Drain and rinse well and set aside. Trim and thinly slice the scallions, keeping the white and light green parts separate from the dark green parts. Trim and thinly slice the radishes into rounds. Peel and mince the garlic.
Prepare the Peanut Sauce: In a bowl, whisk the peanut butter, soy sauce, rice vinegar, 2 tablespoons sesame oil, and 2 teaspoons chili oil until smooth and creamy. Taste and adjust ingredients as necessary. Set aside.
Prepare the Garnish: In a bowl, combine the dark green parts of the scallions with the radishes. Drizzle with two teaspoons sesame oil and toss to coat. Season with flaky sea salt and the toasted sesame seeds and toss. Set aside.
Cook the Pork: In a large skillet, heat the remaining 2 tablespoons sesame oil over medium high until hot. Add the pork and cook, breaking up with a wooden spoon, for 12-15 minutes until well-browned and cooked through. Season with salt and pepper. Add the white and light green parts of the scallions along with the minced garlic and cook for 1 minute until fragrant.
Finish the Udon Noodles: Add the peanut sauce to the skillet with the pork and cook for 1-2 minutes until warm and just beginning to bubble. Add the noodles and reduce heat to low. Toss to coat and cook until the noodles are warm. Turn off the heat.
To Serve: Divide the udon noodles between bowls and pile the radish garnish on top of each bowl of noodles. Sprinkle with more toasted sesame seeds and a drizzle more of chili oil if desired. Enjoy!
