Crumble Topping:

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar

  • ½ cup light brown sugar
  • ½ teaspoon cardamom
  • 1 teaspoon cinnamon
  • 2 tablespoons butter
  • 3 tablespoons water or bourbon
  • 1 ½ teaspoons all-purpose flour

  • 3 egg yolks slightly beaten

To Serve:

  • Pour apple filling into a serving dish or divide between dessert coups, then layer with crumble, finally top with custard. Refrigerate until serving or serve immediately. Garnish with optional toppings, such as dried flowers, slivered almonds, or melting candies.
