Hand mixer
Ritz Cracker Crust:
- 4 large egg whites
- 1 cup sugar
- 1 teaspoon baking powder
- 2 sleeves Ritz crackers crushed
- 1 cup chopped nuts such as walnuts, hazelnuts, or pecans
Pineapple Topping:
- 16 ounces Cool Whip
- 8 ounces cream cheese or Neufchâtel cheese room temperature
- 2 20- ounce cans crushed pineapple strained through a fine-mesh sieve
For Serving:
- Maraschino cherries optional
- Toasted coconut optional
Prepare the Ritz Cracker Crust:
Bake the Crust:
Grease a 9x13'' baking dish. Pour the Ritz cracker mixture into the baking dish and flatten with a spatula. Transfer to the oven for 25-30 minutes until golden brown.
Remove the pan from the oven and cool completely.
