Place the arugula, figs, pecans, and mozzarella in a large bowl and toss to combine. Sprinkle with salt and pepper.
Make the vinaigrette:
Whisk together orange juice and zest, maple syrup, and Dijon mustard in a bowl until smooth. Continue whisking the mixture, adding the extra virgin olive oil as you whisk until smooth and emulsified.
Taste and add salt and pepper. If you like a sweeter vinaigrette, add a teaspoon more maple syrup.
To serve:
Right before serving, dress the salad with the vinaigrette and toss to coat. Serve alongside your favorite main course. Enjoy!
