My favorite spring drink: the strawberry matcha soda! It’s refreshing, lightly sweet, and perfect for an afternoon pick-me-up.

With homemade strawberry syrup, this strawberry matcha soda is my favorite fizzy and refreshing drink for warmer spring days.

My husband and I recently started getting strawberry matcha sodas at a local cafe, and we fell in love immediately. The soda has layers of homemade strawberry syrup and fizzy seltzer and is topped with matcha. It’s a refreshing, sweet, bubbly drink that’s so perfect for spring.

At home, I had a bunch of strawberries that got too cold and froze partially. Once they were thawed, they were a little too soggy to eat for my liking. I decided to simmer them in sugar for strawberry shortcakes, but realized I had lots of my own homemade strawberry syrup.

I immediately marched myself to the grocery store and bought seltzer and raced back home to try my own strawberry matcha soda, and we’ve been enjoying them immensely every afternoon.

You can make homemade strawberry syrup for these matcha sodas, or you can buy premade syrup. If it’s strawberry season, I strongly recommend making your own. Homemade strawberry syrup can last up to three weeks in the refrigerator…plus, you can use the strawberries with shortcakes!

How to make strawberry matcha soda

What you need

You only need three ingredients.

  • Matcha powder: Use a good-quality matcha powder. I use matcha that I buy from a local cafe whose matcha lattes I really enjoy. I also really like Naoki Matcha.
  • Strawberry syrup: Make homemade syrup or use your favorite store-bought brand. If you’re using store-bought, just know that it may be sweeter than homemade. Start with less and add more to taste.
  • Seltzer water: You could have fun and try it with a flavored seltzer water, but I use unflavored.

How to make it

  • Step 1: Prepare the matcha. Whisk the matcha powder with warm water until completely smooth.
  • Step 2: Prepare the strawberry soda. Add the syrup to the bottom of each cup and pour seltzer water on top.

  • Step 3: Finish the matcha soda. Add ice to each cup and pour the prepared matcha on top. Stir to incorporate. Take a sip and add more strawberry syrup for a sweeter drink, if desired!

From there, grab a straw and enjoy!

Prepare the matcha:

  • Place the matcha powder in a bowl with ¼ cup warm water. Whisk until completely smooth.

Make the soda:

  • Divide the strawberry syrup between 2 cups. Pour 8 ounces of seltzer water into each cup. Top with ice. Divide the matcha over each drink and stir to incorporate.

To serve:

  • Finish with another drizzle of strawberry syrup, if you like, and enjoy!

Notes

Note 1: Store-bought strawberry syrup may be sweeter than homemade. Start with 1 tablespoon and add more sweetener to taste. We usually land on about 3 tablespoons of homemade strawberry syrup per drink, but this will vary depending on your sweetness preference.
