These dashi fried mushrooms are an easy little side dish you can throw together in a flash while still delivering big, umami flavors.

A salty, savory mushroom side dish

This easy mushroom side dish requires just a few ingredients and just a few minutes to prepare. Serve them as a topping on ramen or rice bowls, or pile them on top of your favorite grilled protein.

What you need

  • Dashi granules: Dashi is a family of stocks commonly used in Japanese cuisine. The stock is generally comprised of kombu (seaweed) and bonito (a fish related to tuna and mackerel). Dashi broth is the foundation of miso soup, so you’re probably familiar with the flavor profile already! While you can make homemade dashi, I always keep a jar of dashi granules in my cupboard. It’s basically just instant dashi that you can dissolve in water to create a quick bowl of dashi stock. I love to use dashi granules in marinades, like in my Dashi Pork Ramen Recipe.
  • Mushrooms: I used black oyster mushrooms, but any mushroom variety will work here. If using shiitake mushrooms, just be mindful of the cooking time. They have a lower moisture content and will dry out very quickly in the skillet.
  • Sesame oil: In addition to the dashi granules, I add a scant amount of sesame oil for its nutty flavor.

That’s it! You’ll fry the mushrooms in a drizzle of neutral oil, and you can finish with scallions if you like, but they aren’t required.

How to make it

I love how quickly this little side dish comes together! The best part is that if you use oyster mushrooms, you don’t even need to slice them! Just tear them into bite-sized pieces.

  • Step 1: Shred or slice the mushrooms into bite-sized pieces, depending on the variety you’re using.
  • Step 2: Drizzle with sesame oil and sprinkle the dashi granules on top. Use your hands to carefully massage the oil and granules into the mushrooms so that they are evenly coated.
  • Step 3: Fry them up! Heat neutral oil in a skillet until very hot. Add the mushrooms and cook in an even layer without moving for 3–5 minutes. Flip and continue frying for 3–5 minutes longer until the mushrooms are deep golden brown and any moisture in the skillet has totally evaporated.

From there, you’re ready to serve the dashi fried mushrooms! Simply transfer to a serving platter and finish with minced scallions or sesame seeds if you like.

Prepare the mushrooms:

  • Place the mushrooms in a bowl with the dashi granules and sesame oil. Use your hands to evenly coat the mushrooms with the granules and oil.

Fry the mushrooms:

  • Heat 1 teaspoon neutral oil in a small skillet over medium-high heat. Once very hot and shimmering, add the mushrooms and cook without moving for 3–5 minutes. Flip and cook an additional 3–5 minutes until the mushrooms are well-browned and any excess moisture in the skillet has evaporated.

To serve:

  • Transfer the mushrooms to a serving platter and sprinkle minced scallions or sesame seeds on top. Enjoy!
