Who doesn’t love a delicious apple crumble? With a warm, spiced apple filling and crunchy crumble topping, it’s an amazing fall and winter dessert. This dessert is finished with a drizzle of delicious homemade egg custard which adds an incredible richness to this already delicious dessert.
How to Make This Apple Crumble with Custard:
Making this delicious apple crumble with custard is three easy steps.
First, prepare the crumble. To prepare the crunchy crumble all you do is combine flour, sugar, and melted butter in a bowl and mix it with your ends into a crumble and bake it.
Next, prepare the apple filling: The apple filling in this recipe involves simply cooking apples, spices, and butter in a skillet until softened. You can cook them until they’re very soft or you can allow them to cook until softened but still a little crisp, depending on your preference.
Finally, prepare the custard: The custard is the trickiest part of this apple crumble recipe. You will prepare it similar to a hollandaise sauce, by using a double boiler and whisking flour, sugar, egg yolks, and salt until very thick and creamy. If you don’t have a double boiler, you can use a metal bowl over a pot of simmering water but be very careful that it doesn’t get too hot!
To assemble this dessert: You will need 4-5 dessert coups, depending on the size of your apples. You’ll layer the apples, crumble, and finally top with the creamy custard and serve immediately.You can also refrigerate and enjoy the custard chilled, too. If you want to serve individual apple crumble dishes, simply layer the crumble in an 8×10 glass serving dish!

Apple Crumble with Custard
- Small skillet
- Double boiler
- Baking sheet
- Vegetable peeler

- 4-5 Dessert Coups or 8×10 Glass Serving Dish
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- ¾ cup butter
- 4 to 5 large apples peeled and diced
- ½ cup light brown sugar
- ½ teaspoon cardamom
- 1 teaspoon cinnamon
- 2 tablespoons butter
- 3 tablespoons water or bourbon
- 1 ½ teaspoons all-purpose flour
- 3 egg yolks slightly beaten
- 1 cup milk
- 1 cup heavy cream
- ½ cup sugar
- 2 tablespoons flour
- ⅛ teaspoon salt
Cook the crumble:
- Set the oven to 350ºF.
- Put flour and sugar in a bowl, using your hand to mix.
- Stir in melted butter, blend with fingers until the mix looks like crumble.
- Spread onto a parchment-lined baking sheet, place into the oven for 15 to 18 minutes, or until the desired level of brownness. Remove from the oven and set crumble aside to cool.
Cook the apple filling:
- Over medium heat, place apples and butter into the skillet. Once the butter has melted, add sugar, water, and spices, mix well.
- Cook for 10 minutes or until apples are at the desired consistency.
- Add flour and stir well, cooking for 2 more minutes. Remove from heat
Cook the Custard:
- Mix flour, sugar, salt, and yolks in a bowl for a double boiler, mix well. Add milk and heavy cream.
- Put on the boiler over medium heat, stirring frequently until thickened, about 12 minutes.
- Remove from the boiler, set aside to cool.
- Pour apple filling into a serving dish or divide between dessert coups, then layer with crumble, finally top with custard. Refrigerate until serving or serve immediately. Garnish with optional toppings, such as dried flowers, slivered almonds, or melting candies.
