This beef and tomato stir-fry is great way to use fresh summer tomatoes. We never thought to do a beef stir-fry with tomatoes, but this recipe just works!

This beef and tomato stir-fry looks so beautiful plated up thanks to the addition of beautiful chive flowers and microgreens piled on top of the stir fry. I also top this recipe with thinly slice radishes to add a nice spice and crunch to this dish. It’s amazing!

If you can’t find Chinese chives, you can omit or you can replace with more garlic.

This recipe is so tasty and works so well with wild rice. Of course, you can use white rice or even serve this beef and tomato stir-fry on top of cold soba or udon noodles! The possibilities are endless with this simple and delicious recipe.

I loved the somewhat non-traditional stir-fry ingredients in this recipe. I never really thought of doing beef and tomatoes together but the flavors just work SO well with sesame and the heat from Thai chili peppers. What are your favorite stir-fry ingredients? Tell me in the comments!

For this stir-fry, you can replace the beef with chicken, pork, or turkey! Or you can use tofu crumbles for a vegetarian option!

Beef and Tomato Stir-Fry

Ingredients

Rice:

  • 1 cup brown or wild rice or white
  • 1 and 2/3 cup water
  • A pat of butter optional
  • Salt to taste

Beef and Tomato Stir-Fry:

  • 1 pound ground beef
  • 1 teaspoon neutral cooking oil plus more if needed
  • ½ small bunch Chinese chives omit if you can’t find them
  • 5 cloves garlic peeled
  • 3 scallions trimmed
  • 3 Thai chili peppers or 1 Serrano pepper, trimmed
  • 1 teaspoon sesame oil
  • 1 tablespoon soy sauce
  • 1 yellow onion peeled and diced
  • 4 carrots peeled and small-diced
  • 5 medium tomatoes quartered
  • ÂĽ cup Chinese cooking wine
  • 1 tablespoon soy sauce
  • 2 Thai chili peppers trimmed and minced (optional)
  • Salt and pepper to taste

Garnish (Optional):

  • Sliced scallion greens
  • ÂĽ cup microgreens
  • 1 radish trimmed and thinly sliced
  • 1 teaspoon sesame oil
  • Salt to taste

Instructions

Cook the Rice:

  • Combine the rice, butter, water, and a sprinkle of salt and in a sauce pan. Bring to a boil, stir once, cover and then reduce heat to low and simmer for 35 minutes. Note: Cook time will vary depending on rice variety.

Prepare the Aromatics:

  • In a food processor, combine the Chinese chives (if using), garlic cloves, whole scallions, and whole Thai chili peppers and pulse until finely chopped.

Cook the Beef:

  • Heat the 1 teaspoon neutral cooking oil in a wide skillet over medium heat. Add the beef and cook for 8-10 minutes until well browned.
  • Next, add the minced aromatics and toss to combine. Cook for 1-2 minutes more. Add the sesame oil and soy sauce and scrape up any browned bits stuck to the bottom of the skillet. Taste and season the beef with salt and pepper, if desired. Transfer the beef and aromatics to a bowl.

Cook the Onions and Carrots:

  • If the skillet seems dry, add another drizzle of oil over medium heat. Add the onion and carrots and cook for 7-8 minutes or until the onions soften and begin to char around the edges a bit.

Cook the Tomatoes:

  • Add the tomatoes and cook without moving for 5 minutes or until they begin to char and blister.
  • Pour in the Chinese cooking wine and 1 tablespoon soy sauce and scrape up any browned bits. Toss to combine.
  • Add the 2 minced scallions and 2 minced Thai chili peppers (if using) and cook an additional 2 minutes. Taste and season to your preferences. Turn off the heat.

Prepare the Garnish:

  • In a bowl, combine the ingredients for the garnish and toss to combine. Set aside.

To Serve the Beef and Tomato Stir-Fry:

  • Divide the cooked rice between plates and pile the beef and tomato stir-fry on top. Arrange the garnish on top and serve immediately. Enjoy!

Notes

Note: If you use Chinese chives and they have the flowers on them, you can garnish with the chive blossoms!
